I recently encountered a treasure. Tiffany McCauley─founder of the engaging food blog: The Gracious Pantry─has a great story. Like many of us, her positive relationship with food was the result of a challenging journey. Hers was a tale of a starved New York City contest-winning model to a young woman striving to find her way back to a healthy connection with food.
Her engaging food blog is a result of her triumph over food angst into food love, turning daily struggle into celebration─all through the magic of gorgeous, fresh, whole foods. This is the essence of clean eating, which she defines as “the consumption of simple foods in their natural states. The avoidance of processed, boxed or otherwise “tampered with” foods. Eating at regular intervals of every 2-3 hours in small portions equaling approximately 200-300 calories each. Where does the “gracious” come in? That means eating and serving food in a manner “characterized by charm, good taste, and generosity of spirit; “gracious even to unexpected visitors”; “gracious living.” As for pantry, that’s defined as: a room where food, provisions or dishes are stored and served in an ancillary capacity to the kitchen. The derivation of the word is from the same source as the Old French term paneterie; that is from pain, the French form of the Latin panis for bread.
